The Chemistry of Beer

ABSTRACT: All the great flavours we experience in food and—more importantly—drink are due
to molecules interacting with scent and taste receptors in our nose and on our tongue. Flavour
is thus one of the most fundamental biological interactions for small molecules, and one that
people have been experimenting with since the dawn of humanity. This presentation will dive
into the chemistry behind the flavours we experience in beer. Tastings of four different beers
will be used to emphasize the contributions of different molecules to various flavour profiles.
